Re: Tunnel entrance
Just use a tunnel entrance such as any of the built-in AJS ones, place it against your hillside and use a black texture behind to give the illusion of a tunnel. No dig hole required!
It also helps to use loads of greenery above and around the tunnel to hide the fact it is false.

Re: Tunnel entrance
If you are looking for a low single tunnel then you could use one of these bridge assets:
canalbridge2,<kuid26011>
canalbridge,<kuid26007>
Along with a bit of scenic work to hide the fact it's a bridge, you could also add a tunnel interior spline such as those done by "Andi06" to complete the effect.
Alternatively, if you have (or could find) some plans & dimensions for the type of canal tunnel you are looking for, plus a "straight on" photo(s) of suitable tunnels then I may be able to make something for you.
Cheers
