I am under the impression that a driver would treat a double yellow aspect as green but know the next signal was yellow. Please correct me if I am wrong, but if that is the case then is there a way to confuse the game into showing a green signal on the track profile instead of yellow to prevent the AI driver from slowing down too soon.

If you find out, please do let me know. I'm not a driver but I'm pretty sure it's not standard procedure to immediately slam on full service at the first glimpse of a double yellow!
IIRC in the UK signals don't have an associated speed limit anyway (in some countries a yellow signal carries a limit on speed too), it's up to the driver to know where the red signal will be and slow down appropriately. IIRC it's pretty common to pass a single yellow at linespeed if the distance to the next signal allows for sufficient braking distance.
